A simple technique that was lost to time is that of “Governo” according to the tuscan use. It entails slow fermenting the wine as soon as it is produced. The addition of a small quantity of grape-must (sangiovese) selected and dried, setting off a second fermentation, confers a more smooth and rounded flavour.

Color: Intense ruby red with many violet reflections. Fragrance: complex harmony of aromas ranging from very ripe red fruit (especially plum and cherry) to fresh spices. Taste: vigorous and refined wine, savory and slightly sweet in the finish.
